Product Description

Considered "the bible of wild game birds", this new colossal opus of over a thousand pages pays tribute to the art of cooking as well as the art of hunting.

Growing up hunting since childhood, renowned three-Michelin star chef Benoît Violier wants to offer a noble book on everything he learned, found, invented, tested, and understood about wild game birds. In nearly 300 recipes, he toured Europe, presenting an extraordinary variety of birds of the mountains, woods, plains, and water. The recipes are as varied as the meats. Many practical tips are included for a tasty result and respectful of the specific flavors of each game. A wide variety of wild game birds including thrushes, pigeons, geese, and ducks are represented by beautiful pictures and a recipe is devoted to each of them. This work is complemented by portraits of artisans and basic preparations, galantines, soups, and sauces. This book is a 1,088-page encyclopedia resulting from six years of incessant work, meticulous research, and observation.

Thanks to the many diagrams and illustrations, it is also an educational tool for the knowledge of a hundred wild game birds that are part of the European natural heritage.

This is chef Benoît Violier's last book before his tragic death at the age of 44 on January 31, 2016.
